Mix the milk and breadcrumbs. Let it swell for 10 minutes. Add the ground meat, onion, egg, salt, pepper, and sugar to the breadcrumb mixture. Work the mixture thoroughly.

Moisten your hands with cold water and shape the mixture into meatballs. Fry a few at a time in fat, shaking the pan occasionally so that the meatballs roll around and stay round.
