Combine warm water and yeast; rest 5 min until foamy.

Add flour, salt, and 2 tbsp olive oil; mix to a sticky dough.

Knead 8–10 min until smooth.

Place in an oiled bowl, cover; rise 1 hr or until doubled.

Transfer to a parchment-lined tray; gently stretch to rectangle/oval.

Dimple the surface with your fingertips.

Stir remaining 1 tbsp olive oil with garlic, rosemary, and thyme; brush on top.

Sprinkle with coarse sea salt.

Bake at 220°C for 20–25 min until golden.
