Preheat oven to 200°C.

Pat the chicken dry and season generously with salt and pepper inside and out.

Stuff the cavity with lemon halves, garlic, and some rosemary/thyme.

Rub chicken with olive oil, butter, and remaining herbs.

Place lemon slices under the skin of the breasts.

Put chicken in a roasting pan, pour stock in the base.

Roast for 1 hr 15 min, basting occasionally, until juices run clear and skin is golden.

Rest 10 min before carving.
