Heat olive oil and 1 tbsp butter in a pan. Add onion and cook until translucent.

Add garlic and mushrooms; cook until softened.

Stir in arborio rice and toast 1–2 min.

Add white wine, stir until absorbed.

Begin adding stock, one ladle at a time, stirring often. Wait until absorbed before adding more. Continue until rice is creamy and tender (≈20 min).

Stir in remaining butter and parmesan. Adjust seasoning.

Garnish with parsley and serve hot.
